Adjunct Professor/Clinical Coordinator
After receiving her bachelor’s degree from the University of California at Santa Barbara, Amy decided to pursue a career in nutrition and dietetics. She completed her didactic program and obtained her Master’s Degree in Nutrition Science at San Jose State University, and worked as a research assistant at the General Clinic Research Center at Stanford University. She completed her dietetic internship at University of California at Berkeley and began her work as an acute care clinical dietitian at California Pacific Medical Center in San Francisco. Her exposure to patients with cardiac disease, diabetes, and weight management issues prompted her to begin working with The Bay Club and their sports and wellness clinic. She became the club’s Regional Registered Dietitian, designing wellness programs for clients and local companies. In 2013, Amy started her private practice and currently works with clients with weight management issues, gastrointestinal diseases and disorders, and food allergy management. Her commitment and enthusiasm for the profession of dietetics has brought her to FIU to help guide dietetic interns in their journey to become future dietitians.
