Stempel Ph.D. candidate receives Academy of Nutrition and Dietetics Foundation scholarship

Ariana Bolivar, a Ph.D. candidate in Dietetics and Nutrition at Florida International University’s Robert Stempel College of Public Health & Social Work, has received the Academy of Nutrition and Dietetics Foundation General Scholarship in support of her doctoral research on interoception, eating behaviors, acculturation and diet quality.

A registered dietitian, Bolivar is focused on understanding the psychological, behavioral and environmental factors that influence how people relate to food, particularly among Hispanic/Latina Millennial and Gen X women.

“My academic journey at FIU has allowed me to combine my passion for nutrition science with research focused on eating behaviors and health outcomes,” said Bolivar. “Throughout my time at FIU, I have had the opportunity to grow as both a researcher and clinician while collaborating with faculty, students and community members on meaningful projects.”

Bolivar’s research explores how acculturation, emotions, internal body cues and lifestyle factors can shape eating patterns and overall health. Her work aims to contribute to more personalized, compassionate, and culturally sensitive nutrition interventions that support both physical and psychological well-being.

“My experiences working with diverse patient populations inspired me to pursue a Ph.D. because I wanted to better understand the psychological, behavioral and environmental factors that influence eating behaviors and health,” she said. “I became especially interested in how individuals relate to food beyond nutrients alone, including the role of culture, emotions and internal body cues in eating patterns.”

For Bolivar, receiving the scholarship is both an honor and meaningful support for her doctoral work. The award helped fund participant incentives for her dissertation research, assisting her in working toward her desired sample size.

“Receiving the Academy of Nutrition and Dietetics Foundation General Scholarship is both an honor and a meaningful source of encouragement,” she said. “It represents recognition of the hard work and dedication I have invested in my academic and professional journey.”

At FIU, Bolivar credits Dr. Catherine Coccia with helping shape her growth as a researcher and scholar.

“One of the most meaningful aspects of my experience at FIU has been the mentorship and support I have received from Dr. Coccia throughout the program,” she said. “Her guidance has helped shape my growth as a researcher and has strengthened my confidence. Dr. Coccia has continuously encouraged me to pursue opportunities that have challenged me both academically and professionally.”

Through her work, Bolivar hopes to inform public health strategies and clinical practices that support healthier relationships with food and reduce chronic disease risk.
