Stempel College’s cutting-edge food lab is where Dietetics & Nutrition students gain hands-on experience testing ingredients, developing recipes and learning from experts. For instance, students look at mayonnaise with different fat sources and then compare temporary versus permanent emulsions (pictured). They can also use equipment like a penetrometer to measure the tenderness of food by piercing the piece for a designated amount of time and then measuring the depth.
